Question: once you have been on taf/mek, can zel still be an option if needed?
thanks in advance.

Yes. It works the same way so I'm not sure once Taf/Mek stops working you would switch to zelboraf but it's still used. I switched from Taf/Mek to zelboraf/cotellic to see if the side effects were more tolerable and I didn't find that to be the case but it's certainly different for everyone.
Take care
